Step 1
Bring water to a boil. Add chicken carcass, white peppercorns, spring onion and garlic. Cook to a boil again and simmer over gentle heat for 30 minutes until soup turns clear.
Step 2
Strain soup. Add chicken meat (to shred once cooked), carrot, cooked pasta and seasoning to soup.
Step 3
Dish out soup, garnish with chopped spring onions and serve with fried wanton.
