Instructions
Step 1
Heat 2 tablespoons of the oil in a medium saucepan over medium-high heat. Add rice & cook, stirring frequently, until translucent, about 2 minutes. Cover the rice and reduce the heat to a simmer, cooking until the water is completely absorbed, about 25 minutes. Remove pan for the heat, fluff it with a fork, and let it rest, covered, for 10 minutes. Transfer rice to a large mixing bowl and set aside.
Step 2
Preheat oven to 350°. Add remaining 1 tablespoon of oil into a large skillet over medium heat. Add the chopped onion and cook, stirring frequently, until softened--about 5 minutes. Add the chopped broccoli and cook for an additional 5 minutes. Cook onion and broccoli until tender.
Step 3
Add the cooked broccoli mixture, cream of chicken soup, 1 cup of cheese, remaining salt and pepper, and chicken to large bowl containing rice; stir well to combine all of the ingredients together.
Step 4
Transfer rice mixture to a 9 x13 inch baking dish and spread it evenly. Sprinkle the top with the remaining cheese. Bake for 30 minutes, or until gold brown and bubbly.
