Step 1
Preheat oven to 140C(fan)
Step 2
In a food processor blend together rose petals, cumin, sumac, cinnamon, and salt.
Step 3
Line baking tin with the parchment and place your shoulder of lamb. Drizzle with olive oil and rub it all over. Then rub in your spice mix on both sides.
Step 4
Roast for 4 hours. When ready remove from oven and cover with aluminum foil for 10 minutes.
Step 5
To serve, just pull the lamb apart with the fork.
Step 6
Perfect with saffron rice or salad
