Ingredients
3 servings
1 packquorn sausages
2 Tbspolive oil
2onions
thinly sliced
1red pepper
1green pepper
100gsweetcorn
2garlic cloves
1 tspsmoked paprika
2 tspmild chilli powder
100mlapple juice
400gtin chopped tomatoes
150mlvegetable stock
400gtin cannelloni beans
or broad beans, drained
1 bunchflat leaf parsley
small, finely chopped
Instructions
Step 1
1. Heat half the oil in a large frying pan and fry the sausages for 2-3 minutes until lightly golden. Remove from the pan and set aside to cool then slice diagonally into 5 pieces.
Step 2
2. Fry the onions and garlic in the remain oil until soft, then throw in the peppers & continue frying. A little water or extra stock will prevent sticking, if needed.
Step 3
3. Stir in the sweetcorn, paprika, chilli powder and cook for a few more minutes before adding the sherry or apple juice.
Step 4
4. Pour in the tomatoes, beans, stick and return the sausages. Season to taste with salt and pepper.
Step 5
5. Cover and summer for 10mins before sprinkling with parsley.
