Instructions
Make Dough
Step 1
Combine all the dough ingredients except the flour in a large bowl and mix well.
Step 2
Add the flour and mix well. Knead the dough lightly so it stays as fluffy as possible.
Make Cheese Filling
Step 3
Take all the cottage cheese and run it through a meat mincer so that it becomes very fine.
Step 4
Mix the fine dried cottage cheese with the eggs and sugar.
Make Blueberry Filling
Step 5
Combine the blueberries with the sugar.
Create and Cook the Perogies
Step 6
Start a large pot of water with a little salt on the stove so that it boils.
Step 7
Take a golf ball sized ball of dough and roll it out thinly. Use flour to keep from sticking to surfaces, but not too much as it will keep the perogies from closing.
Step 8
Place about a tablespoon of the filling onto the center of the rolled out dough.
Step 9
Fold the dough around the filling in the center. Make sure it's sealed in completely otherwise it will ruin when in boiling water.
Step 10
When all your perogies are created, place them all at the same time in the boiling water.
Step 11
Cook for about 13 minutes.
Fry the Cheese Perogies (Optional)
Step 12
Start a pan on medium high heat with about 3 tablespoons of butter in it.
Step 13
Once the butter has melted, place the perogies in the pan and fry them on each side for a minute or two or until they brown.
