Palmiers

Completely vegan, this recipe teaches you how to make puff pastry dough, and then turn it into palmiers! Once the dough is finished, they are a two ingredient, flaky and buttery dessert.

Instructions

Puff Pastry Dough

Step 1
Place one 1/2 stick of butter into the freezer to chill for 10 minutes.
Step 2
In a medium to large mixing bowl, whisk together your flour, salt, and sugar.
Step 3
Take your stick of butter out of the freezer, and chop it into small cubes. Add your butter to the large mixing bowl containing the dry ingredients.
Step 4
Using your hands, swirl the cubes of butter around in the dry ingredients so that all pieces of butter become coated.
Step 5
Slowly pour the cold water into the mixing bowl and begin to further break down the chunks of butter into the flour mixture. Butter pieces should be about the size of a pea.
Step 6
From here, knead the dough gently only until a dough ball forms.
Step 7
Shape the ball of dough into a small rectangle, wrap in plastic wrap, and place into the refrigerator to chill for 1 hour.
Step 8
Take your dough out of the refrigerator and lightly flour your work space. Unwrap your dough and place onto floured work station.
Step 9
Begin to roll out the rectangle until the dough is around 1/2 inch thick.
Step 10
Fold dough in half and turn 90°.
Step 11
Repeat steps 9 & 10 3-4 more times.
Step 12
After completing all rotations, fold the dough into thirds and tightly rewrap in plastic wrap to chill again. If you’d like, you can place small pieces of parchment paper between the layers to prevent sticking.
Step 13
Chill dough for 2-3 hours before beginning the cookies.

Cookies

Step 14
Clean your work station so that all flour is removed from the surface.
Step 15
Take half of your demerara sugar and spread it across your work station.
Step 16
Take your chilled dough out of the refrigerator, unwrap and unfold it, and place it over the sugar.
Step 17
Begin to roll out your dough, until you can make a 10in by 10in square.
Step 18
Cut the messy edges off of the square and lightly mark a center line down the middle of the dough, towards you.
Step 19
Sprinkle the other 1/8 cup of sugar over the top of the dough.
Step 20
Begin from the left side and roll the dough into a log, until you reach the center line.
Step 21
Repeat on the right side.
Step 22
Cut the double-log of dough into inch long chunks and place on baking tray.
Step 23
Bake for 15 minutes, flipping after 7 minutes.
