Step 1
Preheat oven to 420.
Step 2
Prepare garlic cloves and set garlic cloves aside. Clean kale and prepare with a rough chop set aside. Clean other veggies and chunk into even pieces.
Step 3
In 13x9 baking dish spray with non-cooking spray and spread kale on the bottom of the pan. Take the “chunked up” veggies and mix with avocado oil and seasoning. Place the veggies in a single layer over the bed of kale. Place garlic cloves in the mixture. Bake at 425 until top layer of veggies brown.
