Instructions

Step 1
1. Heat a large heavy bottom skillet over medium heat or preheat oven to 375°.

2. In a large bowl, season greens with oil, salt and pepper to taste. Add garlic or onion, if desired.

3. Place greens in skillet if cooking stovetop or on a sheet tray if using the oven. Cook, keeping a close eye on progress and stirring often, until greens are wilted. Spinach will take 1 minute; hardier greens will take about 7 minutes.

4. Serve hot, room temperature or cold.
