Ingredients

For the cake
200gbutter
softened
225gcaster sugar
3eggs
divided into whites and yolks
3 Tbspcocoa powder
100gdesiccated coconut
165gplain flour
or spelt flour
2 tspbaking soda
200mlbuttermilk
150mldouble cream
For the glaze
Instructions
Step 1
1. First cream butter and sugar light and fluffy.
Step 2
2. Add the egg yolks and mix again.
Step 3
3. Next add the coconut and sift in the flour, cocoa powder and baking powder alternately with the cream and buttermilk. Mix again until combined.
Step 4
4. Whisk the egg whites until stiff and fold them into the batter taking care not to overmix.
Step 5
5. Line a baking tin/dish or butter and sprinkle with flour. Add the batter and spread evenly.
Step 6
6. Bake in a preheated oven for approx 25-30 minutes at 160C fan until a skewer comes out clean.

For the glaze:

1. Melt butter in a small saucepan on gentle heat and add coffee. Add the icing sugar and cocoa powder and mix until thick and combined.
Step 9
2. Once cooled, spread the glaze on the cooled cake, top with coconut and enjoy!
