Instructions

Step 1
Heat up some oil in a pan and add in your cumin and coriander seeds and cook until it releases the ~aroma~. Then add in the chopped onion and ginger and cook
Step 2
In a medium bowl, mix all the dough ingredients except for water and oil. Add in the oil and use your fingers to combine until it kind of resembles crumbs and will stay together if pressed
Step 3
Slowly add in the water while mixing. Knead it all together. Don't worry if the dough is a little rough. Once it all comes together, tightly cover it in saran wrap and let it rest for at least 30 minutes to an hour. The dough will become more pliable and hydrated
Step 4
Peel and cut your potatoes in quarters and place them in a pot with water and about 1 tbsp of salt. Boil till they're cooked through. Make sure not to over cook them. When you insert a knife into a potato piece, it should go through with the tiniest bit of resistance. Drain the potatoes
Step 5
In a large pan, heat up some oil over medium high heat and add in your cumin and coriander seeds and bloom the spices until aromatic. Then add in the chopped onion and ginger and cook for a few minutes until they start to become translucent.
Step 6
Add in your red chilli flakes and green chilli and cook for a bit. Add in your green peas and potatoes and add in all the remaining spices and mix and cook for a few more minutes. Now let it cool and then add in your cilantro and mint.
Step 7
Now portion out your dough into 16 balls. You can have more or less depending on how big you want your samosas. Roll the balls out into circles and cut in half. Place them in a tray sprinkled with flour and put flour between each layer so they don't stick to each other.
Step 8
Shape the samosas like I've done in the video and use a paste of flour and water as glue. Just mix water with flour until it reaches a spreadable consistency.
Step 9
Place them in your airfryer basket and brush the whole samosa with oil. Air fry at 350F for about 25-30 minutes or until golden brown. You'll maybe need to brush more oil halfway through so keep an eye on them.
Step 10
Take out and enjoy with tamarind chutney! Let me know how it turned out and leave a review! 🤎
Step 11
You can also freeze them and cook them later! Just freeze after step 8!
