Instructions

Step 1
Peel and place potatoes in a pan of water. Bring to boil and then let it boil for further 10-15mins until soft.
Step 2
Drain and mash the potatoes coarsely and then set it aside to cool down
Step 3
Add all the spices (salt, red chilli flakes, garam masala, cumin, coriander , chilli and mango powder) to the potatoes
Step 4
Fry chopped onion and 1 tsp whole cumin in some oil, add ginger, green chillies and frozen peas and cook until peas are soft. Add this to the potato mixture
Step 5
Add some fresh corriander and mix everything together
Step 6
Cut the spring roll pastry sheet in 3 equal parts. Grab two strips for one samosa to make it extra crispy. Fold to create a pocket, fill and seal as shown in the video. Seal with a mixture of plain flour and water. This potato mixture made 45 samosas.
Step 7
You can deep fry these or brush some oil and cook in air fryer for 15 mins. (Tip: if making it in air fryer or baking it, brush oil at 5mins intervals until golden)
