Shrimp Poached with Beer, Old Bay, and Lemon

Ingredients
4 servings
Shrimp
1 bottlebeer
any kind you like
2 teaspoonskosher salt
2lemons
halved
3bay leaves
1 handfulfresh thyme sprigs
1 headgarlic
split horizontally
1 tablespoonold bay seasoning
2 poundsshrimp
jumbo, with shells, heads and tails
lemon wedges
for serving
Cocktail Sauce
Instructions
For the shrimp
Step 1
Fill a large pot with about 2 quarts water.
Step 2
Crack open the beer and pour it in the pot.
Step 3
Add salt and squeeze in lemon juice; toss the halves in, too.
Step 4
Add herbs, garlic and Old Bay.
Step 5
Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
Step 6
Now reduce heat to medium-low and put shrimp in the mixture.
Step 7
Simmer, uncovered, for 2 to 3 minutes or until shrimp are bright pink.
Step 8
Drain and transfer to a bowl.
Step 9
Chill thoroughly, then peel.
Step 10
Serve with lemon wedges and cocktail sauce.
For the cocktail sauce
Step 11
Stir together all ingredients in a bowl and chill for about an hour to allow the flavors to come together.
