Step 1
Add cold water to a pot with kombu and dried anchovies. Bring to a boil and strain.

In a wok, saute scallion whites, garlic, and ginger until fragrant.

Add onions, zucchini, and carrots. Sweat until wilted.

Add rice wine, soy sauce, and the red pepper flakes.

Step 5
Add dashima stock and bring to a simmer. Season with fish sauce. Add your seafood of choice. I used squid, mussels, octopus, and shrimp. Gently poach seafood until cooked.
