Ingredients

4 Tbspdark soy sauce
2 Tbsprunny honey
3 Tbspsriracha hot sauce
depending on how hot you like it, plus extra to serve
1 Tbspoyster sauce
1 tsptoasted sesame oil
Worcestershire sauce
freshly ground black pepper
2 Tbspvegetable oil
265gstir-fry mix vegetables
300grice noodles
4eggs
medium
cashew nuts
roughly chopped
coriander leaves
roughly chopped
1lime
cut into wedges
Instructions
Step 1
In a small bowl, stir together all the ingredients for the sauce and put to one side.
Step 2
Heat half of the oil in a large frying pan or wok until it is ally hot, then throw in the stir-fry veg.
Step 3
Throw the noodles into the pan and mix everything together well – and quickly! – then pour the sauce over and stir to combine.
Step 4
Turn off the heat and put to one side while you fry the eggs.
Step 5
Heat the remaining oil in a shallow frying pan and crack in the eggs, cooking them for 1-2 minutes on a high heat until the edges are crispy but the yolks are still runny.
Step 6
Finish the noodles with a handful of cashews, the coriander leaves and a squeeze of lime before topping each plate with an egg and a little extra sriracha sauce.
