Instructions
Step 1
Pre-heat oven until 375. Chop marcona almonds until bread crumb like consistency. Prep chicken breast and coat in egg mixture with salt and pepper. Coat in marcona almond mixture until fully covered.
Step 2
Place chicken onto baking sheet and place in the oven for 25-30 minutes. Bring water to a boil and add tri colored carrots for 5-8 minutes until soft. Remove from water and add to pan with 2 tbs olive oil, 2 cloves garlic chopped, salt and pepper.
Step 3
Add 2 sweet potatoes to boiled water and cook until soft enough for mashing. Remove from water and dump remaining water. Mash potatoes within the pot and add 2 tbs butter and desired salt and pepper.
Step 4
Sauté carrots and add 1 tbs maple syrup and 1 tbs balsamic glaze. Mix around carrots and spoon maple balsamic mixture on top to cover them. Remove carrots once crispy and brown.
Step 5
Keep pan heated and add remaining 1 tbs maple syrup and 1 tbs balsamic glaze. Keep it moving until thickened and place baked chicken on pan and spoon maple balsamic mixture on top of chicken.
Step 6
Add mashed sweet potatoes to base of bowl and top with chicken and glazed carrots.
