Instructions

Step 1
Turn on oven to 425F.
Step 2
Cut eggplant into thick rounds. Place on baking sheet and coat with oil. Season with salt.
Step 3
Bake for about 30-40 minutes, flipping over half way through, or until eggplant is crispy and browned.
Step 4
Remove eggplant from oven and top with pizza sauce and cheese. Add any toppings you'd like at this stage.
Step 5
Broil on high for about 1-2 minutes (until cheese is melted).
