Ingredients
8 servings

¾ cupcornmeal

1 ½ cupsfat-free milk
i used unsweetened almond milk beverage

1egg
beaten

1 poundlean ground beef
browned and drained of excess fat, i used lean ground turkey

1 envelopedry chili seasoning mix

1 x 10 ouncescan diced tomatoes with green chilies
undrained

1 x 16 ouncescan corn
rinsed and drained

1 cupreduced-fat shredded mexican cheese blend

cilantro
chopped

light sour cream

salsa

guacamole

tomatoes

lettuce

black olives
Instructions
Step 1
In a medium mixing bowl, combine the cornmeal, milk and egg.
Step 2
Stir in the prepared meat, chili seasoning, tomatoes and corn until thoroughly mixed. Pour mixture into crock pot.
Step 3
Cover and cook on HIGH for 1 hour. Set slow cooker to LOW and continue to cook for 3 hours.
Step 4
Remove lid and wipe off any condensation, then sprinkle cheese over tamale pie. Place cover on cooker and cook an additional 5 minutes, or until cheese is melted.
Step 5
Serve warm, alongside additional garnishes (if using).
