This side dish is special enough for holiday entertaining yet easy enough for a busy weeknight since it is prepared in the microwave. It’s a streamlined recipe—ready in just 20 minutes—that’s ideal for crisp autumn days when apples are in season. Look for packages of already peeled and cubed butternut squash in the produce section of the grocery store. Granny Smith apples have a very tart taste that complement the sweet squash, but you could also use a sweeter variety like McIntosh, Ambrosia, or Gala. Swap in rosemary or sage for the thyme, the flavor of both pair beautifully with the ingredients in this side dish.
