For the carbonara sauce

180gcashew nuts
soaked in hit water for 20 minutes

240mlplant milk
oat

1 Tbspgarlic powder

1 tspdijon mustard

4 Tbspnutritional yeast

1 Tbspapple cider vinegar

1 tspblack salt

salt
to taste

pepper
to taste
For the tofu bacon

2 Tbspoil
for frying

100gtofu
drained and pressed

1 Tbspmaple syrup

1 tspliquid smoke

1 tspsmoked paprika

2 Tbspsoy sauce

ยฝ tspgarlic powder

ยฝ tsponion powder
To serve
Instructions
Step 1
Soak cashews in hot water for 20 minutes
For the tofu bacon
Step 2
Cut tofu into small chunks
Step 3
Marinade tofu in maple syrup, liquid smoke, smoked paprika, soy sauce, garlic powder, and onion powder
Step 4
Set aside for 20 minutes or marinade overnight
Step 5
Heat oil and fry tofu on high heat until crispy
For the carbonara sauce

Drain the soaked cashews
Step 7
Blitz all ingredients apart from the black salt and set aside
Step 8
Cook pasta
Step 9
Drain pasta, add sauce and black salt before mixing well
Step 10
Add chopped parsley
Step 11
Serve and top with tofu bacon
