0.5chicken breast
½ tspsalt
½ tsppepper
1 tspdried oregano
½ tsppaprika powder
50mlbuttermilk
50gpanko
500mlsunflower oil

Instructions
Pesto
Step 1
To a blender add all the ingredients and blend until smooth.
Crispy chicken
Step 2
Cut the chicken breast in half. You only need one half.
Step 3
To a bowl add the chicken, seasoning and buttermilk. Mix well. Let the chicken marinate for minimum 30min.
Step 4
To a flat plate add the panko. Coat the chicken in it. Make sure it's covered completely.
Step 5
Heat the oil in the pan. Leave the heat on medium high. Add the chicken and fry for about 3min each side until crispy and golden brown.
Burger
Step 6
Cut the burger bun in half. Toast until golden brown.
Step 7
Slice the mozzarella and tomato.
Step 8
Spread the bottom burger bun half with pesto.
Step 9
Top it with the arugula, tomato slices, chicken and mozzarella.
Step 10
Stack the other burger bun half on top and enjoy!
