Menu Description: "Crispy golden wontons wrap a tantalizing blend of avocados, cream cheese, sun-dried tomatoes, red onions, cilantro, pine nuts, chipotle peppers and spices. Served with a sweet tamarind sauce." Avocado egg rolls or spring rolls seem to be increasing in popularity as an appetizer at casual chains, but they are a bit more of a high maintenance menu item than, say, southwestern egg rolls, or other spring roll variations.u00A0Since avocados are quick to oxidize and turn brown, these rolls must be made and served within a 2 to 12-hour timeframe. Also, cooks must be careful not to over fry the egg rolls or the avocado inside will become too hot, turn brown, and taste pretty gross. So, if you're planning to serve these later in the day, make them in the morning and let them chill out in your fridge until it's time to fry them up. You can also make the tamarind sauce early in the day and park it in the fridge. You'll need a little tamarind paste for this sauce, which can be found at Whole Foods or specialty stores. If you don't want to clone the sauce as served in the restaurant, you can always use your favorite sweet and/or spicy bottled dipping sauces. Preheat the oven to 425 degrees Fahrenheit. Place a sheet of parchment paper on a baking sheet and drizzle with olive oil.

In a medium size bowl, combine the diced avocados, salt, pepper and lime juice. Set aside.
Step 4
Place the sun dried tomatoes, cilantro and shallot in separate small bowls and set aside.
Step 5
Assemble a line with the egg roll wrappers, bowl of avocado, sun dried tomatoes, cilantro, shallots and the baking sheet. Put some water in a little bowl, this will act as the glue

Take one egg roll wrapper, place 2 tbsp avocado, sprinkle in some shallot, cilantro and sundried tomatoes. Brush the sides with water. Fold over the sides and roll. Repeat. Brush with olive oil.
Step 7
Bake for 12 minutes, then flip over. Bake for 5-8 more minutes until they are golden brown on all sides.
Step 8
Meanwhile, combine all the for the dipping sauce in a small bowl and place in a serving dish with the avocado egg rolls. Garnish with cilantro. Ready to serve.
