The Ultimate Chicken Fried Steak is fried to golden perfection and topped with the creamiest gravy you can imagine. It's hard to imagine a more quintessential Southern meal. The hard part is deciding whether you want to make it for breakfast or dinner. My family can't get enough of these tender steaks with that delightful crispy, crunchy coating. And the gravy? Heaven!

Instructions

Step 1
In shallow bowl, whisk together flour, 1t pepper, 1t salt, paprika, onion powder, garlic powder, baking soda, & baking powder. Set aside.

In another shallow bowl, whisk together buttermilk , Tabasco® Sauce, & eggs. Set aside.

Pat cube steaks as dry as possible with paper towel. In very sm. Bowl, mix 1t pepper & 1t salt; season steaks with salt/pepper mixture. Let sit (5 min.); pat dry again with paper towel.

Use standard breading procedure to coat steaks :flour (shaking off excess) - egg - flour mixture
Step 5
Preheat oven to 250F Place breaded steaks on sheet pan or metal rack; press any of remaining flour mixture into the cube steaks (make sure that entire steak is completely coated.). Let sit (10 min.)

Meanwhile, heat oil in heavy skillet over med.-high heat. (How much oil you need depends on the size of your skillet.) You want it to be about 1/4” deep. (No deep frying the steaks, just shallow frying.)
Step 7
Test oil by dropping a bit of breading into in. Oil should sizzle & bubble around breading. (Oil should be glistening but not smoking - about 320-340F.) Now we're ready to fry.
Step 8
Place two steaks into the pan at a time; fry (3-4 min. on each side) until golden brown. (Do not flip more than once or breading will fall off. Do not fry more than two steaks or the pan will be too crowded and the breading will fall off.(

Remove steaks from pan; drain on paper towels. Place in preheated oven. Turn skillet to med.

Gravy

Step 10
Pour remaining grease into heat-safe bowl or glass measuring cup (I used my Pyrex). (Do NOT scrape the skillet clean.) All of those bits of yumminess in the skillet can flavor gravy.

Add back in 4T of grease to hot skillet.
Step 12
Combine cream & milk; slowly drizzle in ~2 1/2C into skillet, whisking constantly. (It might look a little crazy right at the beginning, but it will all come together.)
Step 13
Whisk in flour; continue whisking 2-3 min.) until nice & golden brown.
Step 14
Continue whisking to bring gravy to simmer. Cook (5-7 min.) until gravy is smooth & creamy. (If gravy gets too thick, add in a little more milk.) Season with S&P, to taste. (Mine didn't need any salt but LOTS of pepper!)
Step 15
Serve chicken fried steak with gravy, mashed potatoes, & your favorite green veggies. ENJOY!
