One Pot Fried Rice

This is a quick one pot recipe, perfect for a busy weeknight dinner! I paired mine with fried shrimp but it would be great with chicken, too!

Instructions

Step 1
Turn your stove to medium high heat
Step 2
To a large pot, begin heating heating your oil
Step 3
Chop your onion that add it along with the drained peas and carrots to the skillet. Sauté for a couple of minutes

Add rice and veggie broth stir and bring to a simmer. Once simmering, turn the heat to low and cover and cook for 18-20 minutes
Step 5
Once done, stir and create a hole in the middle. Add butter and once melted in the middle, add your eggs and scramble
Step 6
Once your eggs are done cooking, mix them into the rice. Add soy sauce and seasonings to taste
Step 7
Fry for a few minutes and serve
