Instructions

Prep The Rice!

Step 1
Cook the rice and cool it beforehand! Overnight/leftover rice is always the best for fried rice!

The Frying Sauce

Step 2
Mix 2 tbs oyster sauce, 2 tbs Soy sauce and 1 tbs mirin into a small bowl.

Finely chop 2 spring onions and add. Set the sauce aside.

The Fried Rice

Step 4
Thinly slice 4 cloves of garlic and mince 1 shallot. Set both in a COLD frying pan with 1 tbs of vegetable oil and 1 tbs of butter. Set to medium (3) heat and allow to slowly start to cook for ~3 minutes.

Step 5
Once the garlic and shallots become fragrant and begin to show colour, move them aside in the pan and add another tbs of butter and 2 beaten eggs once the butter has melted. Scramble the eggs in the garlic oil before mixing everything together.
