Low-Carb Chocolate Ramekin Cake

This quick, low carb chocolate cake is moist and delicious. The only added sugars are 1 teaspoon of honey, 11 dark chocolate chips and 1 teaspoon of sweetened, shredded coconut. This is a small, 12 oz ramekin of cake that I divide into 4 servings. The entire 12 oz serving has 13.5 grams of sugar and 15.5 grams of carbs, again which comes from the chocolate chips, honey and coconut. As you can see, no added sugars. You get 0 grams of sugar and 4 net carbs if you omit these last three ingredients and add 2 tablespoons of erythritol or stevia. Also, I’ve seen this cake bake in 12 minutes in the oven in another kitchen so watch it carefully. This cook time is based on my old, worn-out oven.

Instructions

Step 1
Mix everything together, except egg white, chocolate chips and coconut. Once mixed, add in chocolate chips and coconut.
Step 2
Beat egg white with cream of tartar until stiff then fold into cake batter.
Step 3
In a well buttered ramekin, pour in cake batter and bake at 350° for 20-25 minutes, depending on oven. Or bake in the microwave for about 90 seconds. Let cool. Once cooled, dig in!
Step 4
It’s better to underbake slightly, as the cake will continue to cook for a couple of minutes after it has been removed from the oven. Besides, a bit of molten chocolate lava makes it extra chocolaty delicious!
