peeled and cut into wedges
1red pepper
deseeded and diced
4cloves garlic
peeled and crushed
475gskinless chicken thigh fillet
cut into large chunks
415gsweet potato
cut into 2cm chunks
2 tspolive oil
75gpomegranate molasses
2 tspcumin seeds
salt
pepper
1 bunchcoriander
small, or parsley, leaves roughly chopped

Instructions
Step 1
Step 1 Preheat the oven to 220°C.
Step 2
Put the onions, pepper, garlic, chicken thigh and sweet potato into a large roasting tray.
Step 3
Whisk the oil, pomegranate molasses, cumin seeds and a good pinch of salt and pepper together, pour into the tray
Step 4
then toss everything together.
Step 5
Roast for 35 minutes, giving everything a good shake halfway through cooking.
Step 6
Step 2 Remove from the oven and top with the coriander and pomegranate seeds to serve.
