Step 1
1. Preheat oven to 375 degrees.

2. Spray a 12 cup muffin tin with non stick cooking spray.

3. In a large bowl, combine flour, cornmeal, baking soda and salt. Whisk until combined.

4. In another bowl, whisk together buttermilk, butter, sugar, eggs and honey. Pour egg and milk mixture into the bowl with the dry ingredients. Stir until well combined.

6. Add cranberries and mix until well combined. Scoop the batter evenly into the mini loaf pan or muffin pan. Bake for 20 minutes.

7. Remove from oven and cool on a wire rack. Melt half a stick of butter and one tablespoon of Miss Lena’s and brush on top of cornbread. Drizzle with a bit of honey.
