Instructions
Step 1
Cook potatoes and carrots in boiling water until tender.
Step 2
Saute bacon until crisp. Drain on paper towels. Crumble.
Step 3
Saute onion and celery in 2 tbsp of the bacon fat until tender. (Do not brown)
Step 4
Combine potatoes, carrots, onion mixture, bacon, salt, pepper, milk, and cream. Simmer for 30 minutes (Do not boil).
Step 5
Garnish with cheese and parsley.
