Instructions

Step 1
Mix ground beef, onion, salt, pepper, egg, bread crumbs, sour cream, and butter together with hands. Form into golf ball-sized balls. Set aside.
Step 2
Make dumpling dough by mashing or grating the potatoes. Add cream of wheat, salt, and eggs.
Step 3
Work in enough flour to make a thick dough.
Step 4
Form into large rope. Cut into pieces the size of golf balls, or large enough to fit around the hamburger balls.
Step 5
Flatten each piece of dough.
Step 6
Place hamburger ball in center. Bring ends up around the meat, sealing well.
Step 7
Drop into boiling salted water and cook for 20 minutes.
Step 8
Remove from water and place in a shallow, well-buttered baking pan. The dumplings stick very easily so be sure to use plenty of butter in baking pan.
Step 9
Spread sour cream over each dumpling.
Step 10
Bake at 450 about 20 minutes until browned. Serve with sauerkraut.
