Step 1
1. Preheat oven to 180 degrees
2. Dice onion and chop all veggies into small pieces
3. In a large frying pan, heat olive oil and fry onion and garlic until onion is transparent
4. Add all the veggies and cook until soft
5. In a large bowl, whisk eggs, cheese, salt, pepper and water together
6. Add vegetables to egg mixture and combine
7. Lay out taco shells on a baking tray and fill with vegetable and egg mixture
8. Place in the oven and bake for 30-35 minutes or until egg is cook through
