Instructions
Step 1
Preheat oven 325. In small bowl, combine dates enough hot water to cover. Let the dates soak for 10 min. Drain and discard water. Place soaked dates and Coconut oil in food processor, process til paste forms. Add vanilla, cinnamon and salt. Process until combined.
Step 2
Add almonds, pecans, and walnuts to date mixture in food processor. Pulse a few times to combine.
Step 3
Line LG baking pan with foil. Spread granola on foil. Sprinkle the granola with the coconut flakes, sunflower seeds, and pumpkin seeds. Bake 20 to 25 min or until toasted and beginning to crisp.
Step 4
Remove the pan from the oven and let cool completely.
