Instructions
Step 1
Preheat oven to 375ºF. Line a baking sheet with parchment paper.
Step 2
Chop your pecans and walnuts.
Step 3
Combine the dry ingredients: In a large bowl, add all the nuts, seeds, cinnamon, ginger, and salt. Mix thoroughly.
Step 4
Combine the wet ingredients: In a saucepan, heat the coconut oil and sweetener (maple syrup or honey), until the coconut oil is liquified and the sugar is melted. Stir in vanilla. Alternatively, use a microwave and heat for about 1 minute, until coconut oil is liquified. Stir well together. Note: If using avocado oil, simply stir in avocado oil with your sweetener (no need to heat).
Step 5
Pour the wet ingredients into the dry ingredients and toss to combine.
Step 6
Spread the granola mixture evenly into a thin rectangle shape onto the baking sheet. Bake for 15-20 minutes, until granola is lightly golden.
Step 7
Remove from oven and cool. Note: The homemade granola will set and become crisp as it cools. Once cool, break apart into clusters and enjoy! Optional: Add in any dried fruit or chocolate. Store in an airtight container for up to 1 month (or in the freezer for months).
