French lentille du Puy if possible
1 cuponion
diced
1carrot
medium, diced
1 ribscelery
diced
2 clovesgarlic
chopped
2Italian sausages
removed from casing
2hot Italian sausages
removed from casing
1tomato
diced, or small can diced tomatoes
1 tspItalian seasoning
salt
pepper
to taste
4 cupsWater
or chicken stock
Instructions
Step 1
Drop sausages in small chunks in a hot large pot and stir until sausage is slightly brown. Add vegetables except tomatoes and soften veggies a bit on medium heat. Add tomato lentils and Italian seasoning, salt and pepper and add 4 cups water.
Step 2
Stir, cover and cook on medium low until lentils are tender. French lentils take longer than American ones. Add more water if soup appears too thick. Check for seasoning towards the end.
