Chili Lime Chicken and Pineapple Skewers

Grilling season is back and these grilled chili lime chicken and pineapple skewers were delicious way too kick off my favorite time of year.

Ingredients

3 Tbsp olive oil
Zest of one lime
Instructions
Step 1
If using wooden/bamboo skewers soak in water for 20-30 minutes prior to to prevent them from burning on the grill.
Step 2
In a large bowl, drizzle the olive oil and lime juice over the chicken. Season chicken to taste with Spicelopedia’s Chili Lime adobo with Chipotle seasoning.
Step 3
Coat the chicken with the marinade and cover the bowl with Saran Wrap and place in the refrigerator for 2-4 hours.
Step 4
Prepare grill (or indoor grill pan)
Step 5
Remove the chicken from the marinade and thread onto skewers, alternating the pieces and dividing them evenly with the onions, peppers and pineapples.
Step 6
Allow a bit of space between the meat, fruit and veggies and to allow them to cook evenly.
Step 7
Cook on grill until nicely charred and cooked through – 6-10 minutes. Serve with cilantro lime rice and black beans.
