Pressure Cooker Vegan Sloppy Joes

Lentils are pressure cooked in a flavorful sauce of garlic, onions, tomato, and brown sugar. It is seasoned with mustard powder, paprika, and chili powder to impart authentic flavor into these vegan sloppy joes. When prepared in your MultiPot pressure cooker, they are done in just about a half an hour. Optional topping ideas: pickles, onions, hot sauce, and barbeque sauce.

Instructions

Step 1
Combine water, lentils, onion, garlic, tomato sauce, brown sugar, Worcestershire sauce, mustard powder, paprika, and chili powder in the inner steel pot of pressure cooker.
Step 2
Seal lid on pressure cooker, turn steam vent handle to Sealing, and select Pressure Cook. Cook on High Pressure for 20 minutes. Turn steam vent handle to Venting to quick-release pressure.
Step 3
Press Sauté on the pressure cooker; cook and stir sloppy joe mixture until it thickens to desired consistency.
Step 4
Spoon sloppy joe mixture onto buns.
