Use lentils or tofu. Not both
Mix dry ingredients
Blend wet ingredients
Instructions
Step 1
combine dry ingredients in a stand mixer with a paddle beater
Step 2
combine wet ingredients with firm tofu in a blender until smooth
Step 3
Run the stand mixer with the dough hook and pour the mixture from the blender in while running
Step 4
Keep a stand mixer running on two or three for 5+ minutes until a dough is formed and is only slightly sticky
Step 5
Divide doe into three balls then twist the dough and stretch it and need it then form it into 3 logs
Step 6
Roll the logs in aluminum foil then put a second layer of aluminum foil and place all three logs in the instant pot on a steamer basket over one cup of water
Step 7
Cook on high pressure for 42 minutes with a natural release then let the logs cool on a drying rack on the counter until they are cool enough to put in the fridge (this may take a couple hours)
Step 8
Put in fridge overnight to firm up then slice thinly or twist and rip apart to get chicken like chunks
