Ingredients

2 ½ cupspowdered sugar
1 Tbsplemon zest
2 Tbsplemon juice

If needed, a little at a time to make the frosting the desired consistency

2 ½ cupsap flour
1 tspbaking powder
½ tspbaking soda

Instructions
Preheat oven to 350°F
Step 1
In mixing bowl, combine butter, sugar, & vanilla; add eggs, one at a time.
Step 2
Add lemon zest & fresh lemon juice. Slowly add flour, baking powder, baking soda, & salt.
Step 3
Roll dough into 1”-2" balls. Arrange on parchment-lined baking sheet.
Step 4
Bake (10-12 min.) until cookies start to turn golden brown around edges.
Step 5
Place cookies on wire rack to cool.
Lemon Curd
Step 6
In blender, pulse butter, sugar, & lemon zest until combined.
Step 7
Add eggs, one at a time, then lemon juice; blend until smooth.
Step 8
Pour into saucepan; cook over low, stirring constantly. When curd gets to 170°F it will begin to thicken; remove from heat. (10-15 min.)
Step 9
Allow to cool; place in jar, seal, & store in refrigerator. (Use within 2 wks.)
Lemon Cream Cheese Frosting
Step 10
Place butter & cream cheese in mixing bowl; mix with hand mixer.
Step 11
Add powdered sugar, lemon zest, & lemon juice. Mix on high (2-3 min.) until frosting is a nice consistency.
Step 12
Pipe frosting on the cookie alternating with lemon curd in swirls.
