Zucchini Fries — Low Carb Love™

These zucchini fries are the perfect snack! I made two versions, a non pork and a pork version! You guys will be obsessed with whoever one you decide to make!

Instructions

Step 1
Make ranch first.
Step 2
In a small bowl add milk and vinegar. Let it sit for 5 to 10 minutes.
Step 3
After 10 minutes add all remaining , mix well. Adjust to taste
Step 4
Place plastic wrap and place in the fridge .
Step 5
Preheat the oven to 425 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
Step 6
In a large bowl, combine pork crumbs , Parmesan and Italian seasoning; season with salt and pepper, to taste. Set aside.
Step 7
Working in batches, dredge zucchini in Lupin, dip into eggs, then dredge in Pork mixture, pressing to coat.
Step 8
Place zucchini onto the prepared baking sheet. Place into the oven and bake for 20-22 minutes, or until golden brown and crisp.
Step 9
Cut the zucchini in half and into sticks about 1/2 inch thick and 3-4 inches long.
Step 10
In a shallow bowl, combine the almond flour, grated parmesan, Italian and a pinch of salt and pepper. Mix to combine.
Step 11
Dredge zucchini in egg and then in the almond flour mixture and place on a plate or baking sheet.
Step 12
Generously spray zucchini with cooking spray for extra crisp. Optional
Step 13
Working in batches, place the zucchini fries in a single layer in the air fryer. and Cook for 10 minutes at 425, or until crispy. Or oil.
