Ingredients
5 servings
1 lblean ground beef
or use turkey or pork if you want
1onion
small, finely diced
1carrot
large, peeled and shredded
1 cupspinach
freshly chopped
2 teaspoonssalt
2 teaspoonsminced garlic
2 teaspoonsitalian seasoning
½ tspdried oregano
½ teaspoondried basil
⅛ teaspoonred pepper flakes
4 cupslow sodium chicken broth
beef or vegetable
28 ozcanned crushed tomatoes
10 ozbrown rice spaghetti
10 Tbspparmesan cheese
1 Tbspolive oil
Instructions
Step 1
In a large skillet, cook ground beef and onion over medium heat, stirring often, until beef is browned.
Step 2
Add shredded carrot, spinach, salt, garlic, Italian seasoning, oregano, basil and red pepper flakes and cook 1-2 minutes.
Step 3
Add broth and crushed tomatoes. Bring to a simmer over medium-high heat and then dry spaghetti and reduce to medium heat. Cover and cook for 10-15 minutes until pasta is cooked, stirring often to keep spaghetti from clumping. (If sauce thickens too quickly and pasta is not yet cooked, simply add another ¼-½ cup broth and keep cooking)
Step 4
When pasta is cooked, taste and adjust seasonings as desired. Optional: add 1 teaspoon granulated sugar if tomatoes are bitter.
Step 5
Serve with shredded Parmesan cheese and fresh basil as desired.
