I love stew and pot pie, so why not combine the two! This was a really easy recipe that only took about an hour because I used Mr. Dell's Southern Style Hash Browns (cubed potatoes). Created by B.Roys BBQ for Mr. Dell’s.

Step 1
Preheat your oven safe pot and add the olive oil, onions, carrots and mushrooms. Sweat down for 15-20 minutes over medium heat. Set aside. Season your stew meat with salt and pepper and add to the same pot. Brown the meat on all sides for 5-10 minutes adding garlic and thyme. Add the beer, deglazing the pot. Add back the vegetables and bring to a boil. Simmer uncovered for a few minutes. Place the pot in a 400F oven (uncovered) for 45 minutes. At the 45 minute mark, stir in the frozen potatoes and cook for another 30 minutes. Remove and let the stew cool for 15 minutes. Line an oven safe cup with dough on the bottom and add your stew. You’ll want hearty chunks and not much liquid. Cut a small hole in the middle of the top and carefully cover. Bake at 375F for 20 minutes.
