Zucchini Lasagna

This is a lightened version of an old comfort classic! Don't let the zucchini and spinach fool you, it is still jam packed full of flavor!!

Instructions

Step 1
Preheat oven to 350 degrees
Step 2
Slice the zucchini thin and lengthwise.
Step 3
In a pan, add a splash of olive oil and sauce the onions for about 2 minutes until starting to become translucent

Brown the meat with the onions
Step 5
Drain and set aside
Step 6
In a separate bowl, combine ricotta, 2 eggs and 2 tablespoons Italian Seasoning
Step 7
To assemble, add a thin layer of tomato sauce to the bottom of a baking dish
Step 8
Add a layer of the zucchini slices (sprinkle with Italian breadcrumbs to absorb moisture if you choose)
Step 9
Add a layer of ricotta mixture
Step 10
Add a layer of meat mixture
Step 11
Add a layer of spinach (add breadcrumbs here too to soak up some moisture if you choose)
Step 12
Repeat these layers one more time
Step 13
Top with shredded mozzarella, panko breadcrumbs and more Italian Seasoning
Step 14
Cover with foil and bake in oven for 45 minutes
Step 15
Remove foil and bake another 15 minutes
