Ingredients
6 servings
For the salad:
1 cupparsley
finely chopped
6 Tbspolive oil
3 Tbspred wine vinegar
¾ tspsalt
3cloves garlic
minced
½ Tbspred pepper flakes
1 x 15 ozcan white beans
rinsed and drained
1 x 15 ozcan garbanzo beans
rinsed and drained
1 x 15 ozcan black eyed peas
rinsed and drained
1 cupriced cauliflower
¼ cupsunflower seeds
For serving:
Instructions
Step 1
Make the chimichurri. Add the parsley, olive oil, red wine vinegar, salt, garlic and red pepper flakes to a large bowl, Mix to combine.
Step 2
Next, add the white beans, garbanzo beans, black eyed peas, cauliflower and sunflower seeds. Toss everything together.
Step 3
Serve with pita, tortillas or chips.
