Instructions
Step 1
Preheat oven to 350 degrees.

Step 2
Cut the peppers in half vertically. Core and place cut side up in a foiled baking pan.
Step 3
In a large bowl, mix together your drained and rinsed beans, cooked rice and corn.
Step 4
Add the Greek yogurt, tomato sauce and seasonings. Mix thoroughly.
Step 5
Spoon in the mixture to the peppers. Filling them until overflowing. *Depending on the size of your peppers there may be extra filling mix*
Step 6
Top each pepper with both cheeses.
Step 7
Cover with foil and bake for 30 minutes. Remove foil and bake for 5 more minutes.
