Step 1
Preparing the bacon warpped stuffed chicken: Dice your Figs and cut the ciabatta bread place into a bowl this will be our stuffing. Butterly the chicken as best as possible without having uneven sides this will allow us to roll the chicken better.
Step 2
On to plastic film layer your bacon over eachother till you have the size of the chicken covered. Place the chicken over the bacon and lightly season with salt go ham with the pepper ;) Place your stuffing into the centre of the chicken for easy rolling. Like sushi roll the chicken untill you have a log of unedible goodness. Place into the fride until ready.
Step 3
Peel your desired Potatoes, Carrots and onions for a serving of 2: 2 potatoes, 2 carrots 1 onion. Cut your veggies into roast size chunks, into a bowl add oil to coat. place onto a tray with a baking sheet, drizzle honey over all the veggies and season with salt & pepper
Step 4
Into an oven place the roasted veggies on the top rack and the stuffed chicken onto a lower rack in to the oven at 185 for ~30-40 minutes, ensure you keep an eye on everything so nothing burns.
Step 5
Prepare your Kale and Spinach salad with your favourite dressing, both kale and spinach have health benifits (lettuce is just water lads)
Step 6
Once the chicken is cooked through pull it out the oven and coat the chicken in a thick layer of bbq sauce and place back into the oven for another 15 minutes.
