Instructions

Step 1
Cut both ends of the rutabaga and peel. (For strict low carb use less or 4lb and 10oz of cauliflower, roughly 2 1/2 heads)
Step 2
Wash and scrub with brush to remove wax residue. Chop into pieces small enough to fit blender. (To obtain same results, rutabaga weighs 2lb and 10 oz after this process.)
Step 3
Chop cauliflower small enough to fit blender.
Step 4
Blend cauliflower in small amounts at a time and set aside. Make sure everything is blended well.
Step 5
Repeat this process with the rutabaga.
Step 6
Add cauliflower and rutabaga into the same bowl.
Step 7
In a small pot, add annato seeds and oil/grease (12 tablespoons worth). Heat on low allowing the seeds to infuse for a dark amber red color.
Step 8
Once color is achieved, strain and discard seeds. Store in jar a refrigerate to keep fresh.
Step 9
Cook half of cauliflower/rutabaga mix on a non stick pot for 10-12min.
Step 10
Add 4-5 Tbsps of annato infused oil, 1 tsp of salt, 1/2 tsp of black pepper and 2 minced garlic cloves. Mix well for a few min and remove from heat. Set aside in separate bowl.
Step 11
Repeat the process with other half of cauliflower/rutabaga mix.
Step 12
Whisk eggs and mix into seasoned cauliflower/rutabaga mix. (This will be the masa)
Step 13
Divide masa in half and incorporate 1 cup (4.5oz) to each half. Once mixed, taste test and add more salt as needed.
Step 14
Season and cook your meat of choice.
Step 15
Thaw banana leaves if frozen and cut to preferred size.

Using avocado oil, bacon grease or annato oil, wipe each plantain leaf before filling. One side only
Step 17
Spread masa filling in the center of the leaf. Enough to leave an inch border around masa.
Step 18
Add well seasoned cooked meat filling. Enough to leave border of masa.
Step 19
Hold paper on 2 ends and press both sides together. Fold, Tuck, Wrap and tie with 5ft of kitchen twine.
Step 20
Fill large pot with water (enough to cover pasteles), add 1 tbsp and 1 tsp of salt and bring to boil.
Step 21
Once boiling, add pasteles and boil on high, covered, for 25 min.
Step 22
Drain pasteles and serve.
