Broccoli Cream Supreme Spaghetti

Ingredients

16 ozbrocolli

12 ozspaghetti

4 Tbspcream cheese

½ cupparmesan cheese

oil

salt

pepper

2 cupspasta water
reserved
For garlic herb butter
For the roux
Instructions
Make the garlic herb butter
Step 1
Sauté garlic. Soften butter and combine chopped herbs and minced garlic.




Step 2
Place on plastic wrap and roll into log. Refrigerate for 1 hour.

Make the roux
Step 3
Melt butter, once melted reduce heat.


Step 4
Slowly add flour and stir in between
Step 5
Stir for 3 minutes and do not let burn. Transfer to small bowl.
Make pasta

Adjust rack to top position and preheat to 425.

Step 7
Bring a large pot of salted water to a boil.
Step 8
Wash and dry produce.
Step 9
Cut broccoli into bite sized pieces.

Step 10
Toss broccoli with olive oil, salt, and pepper. Roast on top rack until tender, 15-20 minutes.




Step 11
Cook spaghetti to package instructions.

Step 12
Reserve 2 cups pasta water.
Step 13
In pot used for pasta add roux and 1 1/2 cups pasta water, whisk to combine. Cook, whisking until slightly thickened, 2-3 minutes.

Step 14
Reduce heat to medium low and whisk in cream cheese

Step 15
Add spaghetti, garlic herb butter, and half the parmesan to pot with sauce. Cook, tossing, until butter has melted and pasta is creamy. 1-2 minutes. Season with salt and pepper.





Step 16
Stir in broccoli and sprinkle with remaining Parmesan.
