Instructions

Gnocchi dough

Step 1
Hollow out the pumpkin, cut into slices and remove the skin.
Step 2
Cook the pumpkin for 15 minutes over a medium heat.
Step 3
Drain the water and puree the pumpkin. Then leave to cool for approx. 5 mins.
Step 4
Add the flour and egg and knead everything together. If the dough is still too runny (this depends on the size of the egg and how much water the pumpkin has absorbed during cooking), add enough flour to make a smooth dough.
Step 5
Chill the dough for 30-60 minutes.
Step 6
Cut the dough in half and roll out into a roll approx. 3 cm thick. Then cut off pieces approx. 1 cm thick.
Step 7
Shape the small pieces of dough into an oval between your hands. Then roll the dough over a fork to create a grooved pattern. Do the same with the remaining dough.

Sauce

Step 8
Dice the onion and finely chop the garlic.
Step 9
Pour the olive oil into a pan and heat over a medium-high heat. Add the onions and garlic and sautรฉ for approx. 2 mins.
Step 10
Add the spinach and sautรฉ for approx. 2-3 mins. until it has shrunk completely.
Step 11
In the meantime, bring the water for the gnocchi to the boil.
Step 12
Season the spinach with salt, pepper and chili and deglaze with the white wine. Reduce again for 2-3 minutes.
Step 13
Add the cream and simmer for approx. 3-5 mins.
Step 14
In the meantime, cook the gnocchi until they float to the surface. Then remove and add to the sauce.
Step 15
Finally, grate in the Parmesan and mix everything well. Then enjoy.
