Instructions

Step 1
Wash and dry all produce. Thinly slice onion; mince enough for 2 tablespoons. Thinly slice poblano. Dice tomato.

Cook rice in pressure cooker. When cooked, stir in lime zest and 1 tablespoon butter.

Saute onion and poblano.

Crema

Step 4
Combine greek yogurt, a squeeze of lime juice and enough water to reach a drizzling consistency. Season with salt and pepper

Pico de Gallo

Step 5
Combine minced onion, tomato, and a squeeze of lime juice. Season with salt and pepper.

Beef

Step 6
Cook beef and drain. Stir in tomato paste, southwest spice and enough water for a thick sauce consistency. Cook until mixture is thick and saucy.
