For the Shredded Beef Roast
4 poundsbeef roast
such as chuck roast
2 tablespoonsolive oil
1onion
finely chopped
4cloves garlic
minced
2 tablespoonsadobo seasoning
adjust to taste
2chipotle peppers in adobo sauce
minced, adjust to taste for spiciness
salt
to taste
pepper
to taste
2 cupsbeef broth
For the Burritos
Instructions
Step 1
In your 8-quart pressure cooker, heat the olive oil using the sauté function, if available.
Step 2
Sear the beef roast on all sides until browned. Remove and set aside.
Step 3
In the same pressure cooker, add chopped onions and garlic. Sauté until they become translucent.
Step 4
Return the seared beef roast to the pressure cooker. Season it with adobo seasoning, minced chipotle peppers, salt, and pepper. Adjust the amounts of adobo seasoning and chipotle peppers to achieve your desired level of spiciness and flavor.
Step 5
Pour in the beef broth.
Step 6
Close and lock the lid of your pressure cooker. Set it to high pressure (usually 15 psi) and cook for about 60-70 minutes for a 4-pound beef roast. Adjust the cooking time for larger or smaller roasts.
Step 7
Once the cooking time is up, allow the pressure to release naturally for about 10-15 minutes before manually releasing any remaining pressure.
Step 8
Open the pressure cooker, remove the beef, and shred it using two forks. Return it to the pressure cooker. Simmer for an additional 15-20 minutes to absorb the flavors.
