Instructions

Step 1
Preheat the oven to 170°C/340°F/Gas 3. Line two baking sheets with parchment paper (or use one and bake in 2 batches).

Put the dates and ginger into a food processor and blitz to a thick, smooth paste. Add the eggs and blitz until completely incorporated. Add the remaining ingredients and blitz until well combined into a thick, sticky dough.

Lightly wet your hands – it’ll help to stop the dough from sticking to them – then take a heaped dessertspoon of the mixture and roll between your palms into a ball. Place on the baking tray, leaving a little space in between, and flatten with your fingers until you have a patty about 1cm thick. Repeat with the remaining mixture.
Step 4
Bake for about 20 minutes or until firm around the edges, golden in colour and with a slight give in the middle. Remove to a wire and leave to cool before eating. These will keep for several days in an airtight container.
